Learning a New Rhythm at Home

Simple meals, intentional living, and a slower pace There was a time when meal prep felt like another task to complete before the work week began. Something to check off the list so I wouldn’t end up ordering takeout or grabbing whatever was convenient. This week felt different. I spent the day cooking, not out of obligation, but out of intention. Not elaborate meals or anything complicated. Just simple, thoughtful choices that would carry me through the week without effort. I prepared a frittata for breakfast, filled with sautéed onions, bell peppers, and spinach, with a little goat cheese crumbled over the top. Who doesn’t love cheese? Still, it was something healthy, filling, and easy to reheat in the mornings. For dinner, I baked pork chops with asparagus. I had extra asparagus, so I roasted it with potatoes as well. It gives me options without having to think about what comes next. Outside of that, it's simple. Yogurt, fruit, nuts, and homemade bread I made earlier in the week...
